This South Indian curry is a delicious combination of vegetables, spices, and coconut. A fresh coconut paste along with other spices such as coriander seeds, fenugreek seeds, chana dal, cumin seeds, dry red chillies is made, which adds a delicious taste to the curry. The kitchen smelt remarkably delicious with warm aromatic flavors while cooking today's recipe, mixed vegetable kootu. The reason for the wonderful aroma were the roasted spices and lentils - asafoetida, cinnamon, bengal gram and poppy seeds that were ground to a paste with fresh coconut forming the masala base of the kootu.

The ingredients needed to make Vegetable Kootu:
  1. Make ready 1 Chayote (Chow-chow)
  2. Prepare 100 grams cauliflower florets
  3. Take 50 grams green peas
  4. Take 1 Potato (Optional)
  5. Make ready 1/2 cup Moong dal
  6. Make ready turmeric
  7. Get 4 cups water
  8. Get 1/4 cup coconut grated
  9. Make ready 4 - 5 chillies dry red
  10. Get 1 tbsp cumin seed
  11. Prepare salt
  12. Prepare 2 tbsps raw rice
  13. Get 1 tsp mustard seed
  14. Make ready 1 tbsp Ghee butter / clarified
  15. Get 1 tsp mustard seed
  16. Make ready curry leaves

Poricha Kootu is a vegetable stew made using steamed vegetables which are cooked in moong dal and coconut based gravy. Rich in flavour of mixed vegetables, coconut and dal mixture, it gives a wonderful taste. For Poricha Kootu, tamarind will not be added. We can add any vegetables of your choice to make Poricha Kootu.

Instructions to make Vegetable Kootu:
  1. Soak 2 tbsps of raw rice in 5 tbsps of water and keep it aside.
  2. Peel and chop the vegetables. Take a vessel that fits into a pressure cooker, add the vegetables, moong dal, water and add a pinch of turmeric. Pressure cook it up to 4 whistles.
  3. Take a blender jar add all the ingredients given under "For the paste", including the soaked rice. Add the water used to soak the rice. Grind it to a smooth paste.
  4. Allow the pressure to release on its own. Once the pressure is released, take out the cooked dal and vegetables. Add the ground paste. Keep it on medium high heat and allow it to boil for 3-4 minutes. Stir continuously, do not burn it.
  5. Take a small kadaai / pan, keep it on low heat, add the ingredients given under "Tempering" and add it to the Kootu.
  6. Generally Kootu is served with plain white rice, but this can also be eaten as a side dish for chappathi / phulka.

For Poricha Kootu, tamarind will not be added. We can add any vegetables of your choice to make Poricha Kootu. To make mixed veg kootu you can add vegetables like carrot, beans,potato, brinjal, beans, cluster beans, broad beans, pumpkin, ash gourd, yam, peanut, black eyed peas,green peas etc. Usually no souring ingredient like tomato / tamarind is added to it. And also its a no onion garlic dish.
