- Prepare 1 tsp finely chopped chilli
- Take to taste Salt and pepper
Serve Mexican Stack-Es with a cilantro garnish. Velveeta cheese Tostito chips, crushed Lettuce Tomato, chopped Onion, chopped. Add the picante sauce; when heated add Velveeta cheese and heat until cheese is melted. Crush chips and layer with chips, meat mixture, lettuce, tomato and onions.
Steps to make Maxican stack:
- Prepare all ingredients
- Fry chorizo with a little bit (1tsp) of cooking oil and leave it aside
- On a small saucepan, medium heat then add desiccated coconut stir until they turn golden brown then add garlic, sugar, salt and pepper. Mix them all well and put in a bowl.
- Making guacamole, mash avocado in a bowl the. Add garlic, shallots, chilli, coriander and lime juice. Mix well
- Making salsa, put tomatoes, shallots, coriander, salt and pepper and lime in a bowl and mix well
- Fry two eggs on a pan. Keep them on a plate
- Cut up tortilla by using the round cutter then fry them on the same pan as the eggs
- Time to resemble, put tortilla on, add guacamole, salsa, chorizo and repeat until you get to 3-4 layers.
- Garnish with coriander and feta cheese. Add your fried egg on top. Drizzle some Sriracha sauce or Tabasco if prefer. Enjoy!!!
