- Take 1 large Onion, sliced thinly
- Take 1 cup Bell peppers, thinely sliced
- Prepare 1/2 tsp Red Chilli Powder, adjust on spice level of achaari masala
- Prepare 2 tbsp Yogurt
- Make ready 1 tsp Achaari masala/ panchphoran (optional, but recommended)
- Get 1 tsp Salt, adjust as needed

- Prepare 200 gms Paneer cut into cubes
- Get 1 tbsp Oil
- Make ready handful Coriander leaves finely chopped

- Get 1 1/2 cup what flour OR (50:50) wheat + all purpose flour
- Make ready 3/4 th cup warm water
- Take 1 tbsp Oil
- Get 1/2 tsp Salt
Soft melt-in-the-mouth paneer tikka cubes stuffed inside a whole wheat flour rotis. It is a healthy, nutritious and quick recipe that you can easily prepare ate home. Kathi roll is an Indian street food where Indian flatbreads are filled with veggies, chicken, mutton etc etc. Since I'm a vegetarian my favorite is obviously the veggie kathi rolls, the popular ones are filled with paneer [Indian cottage cheese] and potatoes.
Steps to make Paneer Kathi Roll:
- In a bowl, add the paneer, bell peppers with all spices, yogurt and mix everything thoroughly. Rest it for 20 mins in the fridge.
- Meanwhile, In a bowl mix everything under chapati and divide it in 4-5 equal portions. Roll them and cook them over a pan on both sides till light brown blisters are formed.
- In a pan, heat oil and add the marinated paneer and bell peppers. Cook them for 4-5 mins, till they are almost dry. Remove them from heat and add in the coriander leaves
- Take the chapati and apply ketchup /left over marinade if any left. Put some paneer in the center and wrap it like a roll.
- For ease of handling, one side can be cover in a foil or baking paper.
