Instructions to make Sausage, bean and potato stew:
- Chop sausages into bite size pieces. Peel and chop potatoes. Brown sausages in a pan, no oil needed, remove and set a side. In the same pan, add the soffritto mix, stirring to get any brown bits from the sausages too, extra flavour
- Now add stock, bay leaves and passata. Stir and add potatoes. Bring back to the boil and simmer for about 20-25 mins. Add sausages now and continue simmering for another 10 mins.
- Drain and rinse the beans and throw them in now. Season to taste and simmer for another 5 mins. Serve with fresh bread
Cooked in a smoky red pepper and tomato sauce. Serve with fresh bread or mashed potato! Add the canned tomatoes and their juice, one can of beans, and the white wine. Fill the empty tomato can halfway with water, then add this. Turn the heat up to high and bring to a boil.
